Sponge cake

Ingredients for 6 people:

150 gr. of sugar

75 gr. of flour

75 gr. potato starch

5 eggs

1 sachet of vanilla

1 pinch of salt

Butter q. b.


Break the eggs into two bowls, separate egg yolks from the whites of different. Beat the egg yolks with half the sugar, using of electric whips, until the mixture is fluffy and pale yellow. Whip the egg whites in another bowl, then add the other half of the sugar and continue to whisk to obtain a mixture without lumps. At this point add the mixture of egg yolks and egg whites and mix, then sift into the bowl with the flour mixture, potato starch and vanilla. Add a pinch of salt for grow for good the dough during baking. Keep on stirring with a wooden spoon to get a smooth mixture without lumps.

Make sure you have a pan, imburratela and infarinatela. Placed inside the dough for sponge cake and level it carefully using a spatula or the back of a spoon. Place in preheated oven at 180° C the baking tray for approximately 40 minutes. At the end of the cooking, You can check with the classic demonstration of toothpicks, your cake will be ready. Before using it in your preparation let it cool.
