TORRAZZA COSTE (PV), 25 November — Has only 24 years Matthew Metullio, the best up-and-coming chef of North Italy, winner of the’the contest designed by food and wine journalist Luigi Cremona and supported by the Chamber of Commerce of Pavia.
Born in Trieste (Italy), Matteo already has experience in a number of important Triveneto kitchens, including Alle Codole of Canale d'agordo (BL) – with Oscar Tibolla – and the St. Hubertus San Cassiano in Badia (BZ), with Norbert Niederkofler. Today is the chef of star restaurant The Siriola at the hotel Ciasa Salares at Armentarola, always in San Cassiano.
Saturday's semi-finals 23 and Sunday 24, like last year hosted at the historic and fascinating complex of Riccagioia, with the winner qualified for the final of today: Dino Chanda of Rolly of Manerba del Garda (BS), Stefano Bacchelli by By Vittorio in Brusaporto (BG) and Henry Panéro de The Marín the old port – Refreshment, at Eataly Genoa.
Metullio presented a curious sandwich puffed rice and a char with trout eggs, beet and crunchy hazelnuts, accompanied by a horseradish ice cream too strong for my taste, but that evidently liked the majority of “gentlemen” jurors.
